These Air Fryer Jalapeño Cheddar Chicken Meatballs are a quick, easy, and flavorful option that’s perfect for any occasion. With the heat from the jalapeños, the richness of cheddar cheese, and the crispness from the air fryer, these meatballs will be a crowd-pleaser!

  • Total Time: 17 minutes
  • Yield: 8 servings

Ingredients

  • pounds boneless, skinless chicken breasts
  • 2 jalapeños, seeded
  • ⅓ cup fresh parsley
  • ½ red onion, sliced
  • 1 teaspoon salt
  • ¼ teaspoon black pepper (optional)
  • ⅓ cup shredded cheddar cheese
  • 1 large egg
  • 2 cloves garlic

Instructions

  1. Preheat the Air Fryer: Preheat your air fryer to 380°F (193°C) and lightly spray the basket with oil spray.
  2. Prepare the Chicken and Ingredients: Cut the chicken breasts into small pieces and add them to a food processor. Add the jalapeños, parsley, red onion, salt, pepper (if using), cheddar cheese, egg, and garlic to the food processor.
  3. Pulse the Mixture: Pulse the food processor until the ingredients are well mixed and the chicken is finely chopped.
  4. Form the Meatballs: Use an ice cream scoop or your hands to form equal-sized meatballs. Place the meatballs in the preheated air fryer basket, leaving some space between each meatball. You may need to work in batches depending on the size of your air fryer.
  5. Cook the Meatballs: Air fry the meatballs for 12-14 minutes, or until they are cooked through and browned on the outside. Check that they are fully cooked by ensuring the internal temperature reaches 165°F (74°C).
  6. Store and Serve: Once cooked, serve immediately or let them cool before storing them in an airtight container in the fridge for up to 4 days.

Notes

  • For added flavor, feel free to add more jalapeños depending on your heat preference.
  • These meatballs are perfect as a snack, appetizer, or paired with a dipping sauce such as ranch or salsa.
  • If you don’t have an air fryer, you can bake these meatballs in a preheated oven at 375°F (190°C) for about 18-20 minutes.
