Instructions

  1. Make the Peanut Butter Crumbs: In a small bowl, mix peanut butter and powdered sugar with a fork until crumbly. Set aside.
  2. Prepare the Pie Filling: In a medium saucepan, whisk together sugar, flour, and salt. Gradually add milk, whisking to prevent lumps. Cook over medium heat, stirring constantly until the mixture thickens and starts to bubble (about 5–7 minutes).
  3. Temper the Egg Yolks: In a small bowl, beat the egg yolks. Slowly whisk a few tablespoons of the hot milk mixture into the yolks, then slowly pour the yolk mixture back into the saucepan, whisking constantly. Continue cooking for 2–3 more minutes until thick and smooth.
  4. Finish the Filling: Remove from heat and stir in butter and vanilla extract until fully incorporated.
  5. Assemble the Pie: Sprinkle half of the peanut butter crumbs into the bottom of the baked pie crust. Pour the warm filling over the crumbs and smooth the top. Sprinkle the remaining peanut butter crumbs evenly over the top.
