Ingredients
- ½ cup packed light brown sugar
- 2 teaspoons ground cinnamon
- ⅔ cup granulated sugar
- ½ cup unsalted butter, softened
- 2 large eggs
- 2 teaspoons vanilla extract
- 1 ½ cups all-purpose flour
- 1 ½ teaspoons baking powder
- ½ cup milk
- 1 large apple, peeled and finely chopped (about 1 cup)
- 1 cup powdered sugar (for icing)
- ½ teaspoon vanilla extract (for icing)
- 2 tablespoons milk (for icing)
Instructions
- Preheat oven to 350°F. Grease and flour a 9 x 5-inch loaf pan.
- In a small bowl, mix together brown sugar and cinnamon. Set aside.
- In a large bowl, beat granulated sugar and butter until smooth. Add eggs and vanilla extract and beat until well combined.
- Add flour and baking powder to the mixture, then mix in the milk until just combined.
- Pour half the batter into the prepared loaf pan. Top with half of the chopped apples, pressing them slightly into the batter.
- Sprinkle half of the brown sugar and cinnamon mixture over the apple layer.
- Pour the remaining batter over the apple layer. Top with the remaining apples and sprinkle with the rest of the brown sugar and cinnamon mixture.
- Gently pat the topping into the batter using the back of a large spoon.
- Bake for 50 minutes, or until a toothpick inserted in the center comes out clean.
- Cool the bread in the pan for 10 minutes, then transfer to a wire rack to cool completely.
- In a small bowl, whisk together powdered sugar, vanilla extract, and milk until smooth to make the icing.
- Drizzle the icing over the cooled bread and let it set for about 15 minutes before serving.

- Use a firm apple like Honeycrisp or Granny Smith for best texture.
- Let the bread cool completely before adding icing to avoid melting.
