These flavorful baked chicken breasts are seasoned with a blend of spices and topped with butter for a juicy, tender result. Perfect for a quick dinner or meal prep!

  • Total Time: 30-40 minutes
  • Yield: 4 servings

Ingredients

  • 1 tbsp chili powder
  • 1 tbsp garlic powder
  • 1 tbsp onion powder
  • 1 tbsp dried thyme
  • 1 tsp cayenne pepper (optional)
  • ½ tsp kosher salt
  • ½ tsp ground black pepper
  • 4 whole boneless, skinless chicken breasts
  • ¼ cup butter

Instructions

  1. Prepare the Seasoning:
    1. In a medium bowl, whisk together the brown sugar, paprika, chili powder, garlic powder, onion powder, dried thyme, cayenne pepper (if using), salt, and black pepper.
  2. Marinate the Chicken:
    1. Place the chicken breasts in a large zip-top bag and pour the seasoning mixture over the chicken.
    2. Seal the bag and shake the chicken to coat evenly.
    3. Transfer the chicken to the refrigerator and marinate for 30 minutes, or up to 24 hours for more flavor.
  3. Preheat the Oven:
    1. Preheat the oven to 425°F (220°C).
  4. Bake the Chicken:
    1. Remove the chicken from the bag and arrange the breasts on a baking sheet lined with foil.
    2. Place 1 tablespoon of butter on top of each chicken breast.
    3. Bake in the preheated oven for 20-30 minutes, or until an instant-read thermometer registers 165°F (75°C).
  5. Rest the Chicken:
    1. Remove the chicken from the oven and cover with foil. Let the chicken rest for 10 minutes to allow juices to redistribute.
  6. Serve:
    1. Serve immediately, or allow to cool to room temperature. Wrap tightly in plastic wrap and store in the refrigerator for up to 36 hours.

Notes

  • For extra flavor, marinate the chicken for up to 24 hours before baking.
  • You can adjust the cayenne pepper for desired spiciness, or omit it for a milder flavor.
  • Pair this chicken with a simple side like roasted vegetables or a salad for a complete meal.
