Ingredients
- 1 lb boneless skinless chicken breast, pounded to an even thickness
- 2 tsp Avocado Oil
- 1 tbsp Herb Seasoning
- 8 oz fresh mozzarella, sliced
- 2 large, ripe tomatoes, sliced
- 2 tbsp freshly sliced basil
- For the Balsamic Glaze:
- 1/2 cup Balsamic Vinegar
- 2 tbsp brown sugar
Instructions
- Preheat the grill to 375°F (190°C) and oil the grates if needed. Drizzle the avocado oil onto the chicken breasts and season with Rustic Herb Seasoning.
- Grill the chicken for 5 to 7 minutes per side, or until the internal temperature reaches 165°F (74°C). Cover the chicken loosely with foil and let it rest for 5 to 10 minutes.
- While the chicken is resting, make the balsamic glaze. Add the balsamic vinegar and brown sugar to a small saucepan over medium-high heat. Bring the mixture to a low boil, then reduce the heat to medium-low and simmer for 6 to 8 minutes, or until the glaze is thick enough to coat the back of a spoon. Remove from heat and let it cool in a glass jar.
- Slice the grilled chicken and serve it with slices of fresh mozzarella, tomato, and basil. Drizzle the balsamic glaze over the top and enjoy!

- If you want a sweeter glaze, add a little extra brown sugar to the balsamic vinegar mixture.
