Blondies
- 1/2 cup butter, melted and if desired browned
- 1 cup light brown sugar, packed
- 1 egg
- 1 1/2 teaspoons vanilla extract
- 1/4 teaspoon kosher salt
- 1 cup all-purpose flour
- 1/2 cup mashed banana (about 1 medium banana)
Brown Sugar Frosting
- 1/4 cup butter
- 1/2 cup light brown sugar
- 2 tablespoons milk
- 1 cup powdered sugar
Instructions
- Preheat and Prepare Pan: Preheat your oven to 350°F (175°C). Line an 8×8 inch baking dish with parchment paper and spray with nonstick spray to prevent sticking. Set this aside.
- Melt Butter and Combine Blondie Ingredients: In a large saucepan, melt the butter over medium heat. If you wish, continue cooking and swirling the butter until it turns amber and releases a nutty aroma to create browned butter. Allow the butter to cool for 5 minutes before stirring in the brown sugar, vanilla extract, and kosher salt until combined. Next, whisk in the egg until the mixture is smooth, then fold in the all-purpose flour and mashed banana until evenly mixed.
- Bake Blondies: Spread the batter evenly into the prepared baking pan. Bake for 30 minutes, or until the blondies are set in the center and a toothpick inserted comes out clean or with moist crumbs. Once baked, transfer the pan to a wire rack to cool.
- Make Brown Sugar Frosting: While the blondies cool, prepare the frosting. In a medium saucepan, melt the butter over medium heat. Add the light brown sugar and milk, stirring until the mixture reaches a gentle boil. Remove from heat and let cool for 5 minutes. Whisk in the powdered sugar until smooth and creamy.
- Frost and Cool Blondies: Spread the brown sugar frosting over the blondies when they are mostly cooled but still slightly warm enough for spreading. Allow the frosting to set, then let the blondies cool completely before cutting into 12 squares and serving.

- If browning the butter, carefully melt it in the saucepan and continue cooking, swirling frequently until it reaches a deep golden brown color and develops a nutty aroma. This step enhances the flavor but is optional.
