Chicken Skewers

  • 1 tsp black pepper
  • ½ tsp cayenne pepper
  • ½ tsp salt
  • 2 Tbsp hot honey (optional)

Bang Bang Sauce

  • 1 cup mayonnaise (more as needed)
  • 2 Tbsp fresh squeezed lime juice
  • ⅔ cup Thai sweet chili sauce
  • ¼ cup Sriracha (adjust for desired heat level)

Instructions

  1. Prepare the Chicken: In a large bowl, combine the cubed chicken thighs with olive oil, paprika, garlic powder, black pepper, cayenne pepper, and salt. Toss well to ensure the chicken pieces are evenly coated with the seasoning.
  2. Thread the Skewers: Working with one skewer at a time, carefully thread the seasoned chicken pieces onto the skewers, filling about half to three-quarters of each skewer.
  3. Mix the Bang Bang Sauce: In a medium bowl, combine mayonnaise, Thai sweet chili sauce, Sriracha, and fresh lime juice. Stir well until smooth. This mixture will yield about 1.5 cups of sauce.
  4. Prepare for Cooking: Divide the sauce into two portions. Pour half into a separate bowl and set aside for glazing and dipping after the chicken is cooked. Use the remaining sauce to generously brush the chicken skewers, making sure to coat in between the pieces.
  5. Grilling Option: Preheat your grill to medium-high heat. Place the sauce-coated chicken skewers on the grill. Cook for 15-20 minutes, turning frequently to ensure even cooking and to reach an internal temperature of 165°F. Continue brushing the chicken with the reserved sauce as it cooks to build up a flavorful glaze, until the chicken is caramelized.
  6. Air Fryer Option: Place the chicken skewers in a single layer inside the air fryer basket; work in batches if necessary.
