Ingredients
- 1 (13 oz) party size bag barbecue potato chips (e.g., Lays)
- 2 pounds chicken tenders
- 1 cup mayonnaise
- 1 tablespoon Dijon mustard
- 3 tablespoons BBQ sauce
- 2 tablespoons butter, melted
- Salt and pepper, to taste
Instructions
- Preheat the oven to 400°F (200°C) and line a baking sheet with aluminum foil or parchment paper.
- In a small bowl, mix together the mayonnaise, Dijon mustard, and BBQ sauce until well combined.
- Pour the sauce mixture over the chicken tenders and toss to coat evenly.
- Place the BBQ potato chips in a large ziplock bag and crush them using a rolling pin or glass until finely crumbled.
- Transfer the crushed chips to a shallow bowl, drizzle with melted butter, and mix until combined.
- Press each chicken tender firmly into the chip mixture, ensuring all sides are well coated.
- Arrange the coated chicken tenders on the prepared baking sheet.
- Bake in the preheated oven for 15–20 minutes, or until the chicken is fully cooked and the coating is crispy and golden.
Notes
- For extra crispiness, bake on a wire rack placed over the baking sheet.
- Check doneness with a meat thermometer – chicken should reach an internal temperature of 165°F (74°C).
- Serve with ranch, BBQ sauce, or honey mustard for dipping.
- You can use different flavored chips for variety – sour cream & onion, spicy, or plain.
