These Beef Tips in Mushroom Gravy are seared sirloin cubes simmered in a savory, rich mushroom and onion gravy. It’s an easy, hearty comfort food meal that’s ready in just 30 minutes — perfect for a cozy weeknight dinner.

  • Total Time: 30 minutes
  • Yield: 4 servings

Ingredients

  • 1 tablespoon olive oil
  • 1 lb top sirloin steak, cut into 1-inch cubes
  • Salt, to taste
  • Pepper, to taste
  • 3 tablespoons butter
  • 1 medium yellow onion, diced
  • 8 ounces cremini mushrooms, sliced
  • 3 cloves garlic, minced
  • 3 tablespoons flour
  • 1½ cups low sodium beef broth
  • 2 tablespoons Worcestershire sauce
  • Chopped fresh parsley, for garnish

Instructions

  1. Heat olive oil in a large skillet over high heat.
  2. Season the cubed steak with salt and pepper.
  3. Add the steak tips to the hot skillet in a single layer. Cook for about 3 minutes per side, until browned.
  4. Remove the steak from the skillet and set aside, covered to keep warm.
  5. Reduce heat to medium-high. Add butter to the skillet and let it melt.
  6. Add diced onion and cook for about 30 seconds, stirring occasionally.
  7. Add mushrooms, season with salt and pepper, and cook for about 5 minutes, stirring occasionally, until tender and browned.
  8. Stir in minced garlic and cook for 30 seconds more.
  9. Sprinkle flour over the mushroom mixture and stir well for 1 minute to cook off the raw flour taste.
  10. Slowly whisk in the beef broth and Worcestershire sauce, stirring constantly to avoid lumps.
  11. Bring the mixture to a simmer and cook for 2 minutes, or until the gravy thickens.
  12. Return the beef tips to the skillet and stir to coat in the gravy. Cook for 1–2 more minutes, until heated through.
  13. Remove from heat, garnish with fresh parsley, and serve.

Notes

  • Best served over mashed potatoes, egg noodles, or rice.
  • You can substitute sirloin with stew meat or tenderloin, but adjust cook time accordingly.
  • For extra richness, stir in a splash of heavy cream or a knob of butter just before serving.
  • Leftovers keep well in the fridge for up to 3 days.
