Meat Mixture
- 1/2 yellow onion, chopped
- 1 lb lean ground beef (96/4)
- 1 tsp yellow mustard
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp salt
- Fresh cracked black pepper, to taste
- 1/2 cup beef broth, divided
- 1 tsp corn starch
- 1 tsp Worcestershire sauce
- 5 slices American cheese
- 5 brioche hamburger buns
Big Mac Sauce
- 1/4 cup mayonnaise (60g)
- 1/4 cup ketchup (60g)
- 1/4 cup dill pickles, finely chopped
- 1 Tbsp dill pickle juice
Instructions
- Cook the beef and onions: Spray a large skillet over medium heat with nonstick spray. Add the chopped onions and ground beef. Break the meat into pieces and cook until it is fully cooked through and the onions are softened, approximately 5 minutes.
- Season the meat: Add the garlic powder, onion powder, salt, and freshly cracked black pepper. Stir thoroughly to coat the meat evenly. Mix in the yellow mustard and Worcestershire sauce. Pour in 1/4 cup of beef broth, stir to combine, and let simmer for 2-3 minutes.
- Thicken the sauce: In a small bowl, mix the cornstarch with the remaining 1/4 cup beef broth until dissolved. Add this mixture to the meat in the skillet. Stir well and allow the sauce to simmer for about 5 minutes until it thickens.
- Make the Big Mac sauce: While the meat sauce thickens, combine the mayonnaise, ketchup, finely chopped dill pickles, and dill pickle juice in a small bowl. Stir well to create the signature Big Mac sauce.
- Assemble the sandwiches: Preheat your oven to broil. Place the bottom halves of the brioche buns on a baking sheet. Spread 1 tablespoon (16g) of Big Mac sauce onto each bottom bun. Add shredded iceberg lettuce, then top each with about 1/2 cup (103g) of the meat mixture and a slice of American cheese. Place under the broiler just long enough for the cheese to melt, watching carefully to avoid burning.
- Finish the burgers: Spread an additional 1 tablespoon (16g) of Big Mac sauce on each top bun. Optionally, add extra pickles if desired. Place the top buns on the sandwiches and serve immediately.
- Optional step: For extra texture, you can broil the buns separately before assembling to achieve a nice crispy finish on the bread.
