Ingredients

  • 2 cups all-purpose flour
  • 1 tablespoon cornstarch
  • 1 teaspoon baking soda
  • 3/4 teaspoon kosher salt
  • 3/4 cup unsalted butter, room temperature
  • 3/4 cup dark brown sugar, packed (or light brown sugar)
  • 1 large egg, room temperature
  • 1 tablespoon vanilla extract
  • 1 cup white chocolate chips or chunks
  • 3/4 cup frozen blueberries (or fresh blueberries)

Instructions

  1. Preheat the Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Mix Dry Ingredients: In a medium bowl, whisk together the flour, cornstarch, baking soda, and salt. Set aside.
  3. Cream Butter and Sugar: In a stand mixer (or using a hand mixer), cream together the butter and brown sugar on medium speed for about 2 minutes.
  4. Add Egg and Vanilla: Add the egg and vanilla extract, and mix until combined (about 1 minute on medium-low speed).
  5. Combine Dry and Wet Ingredients: Slowly add the dry ingredients to the wet mixture on low speed. Scrape down the sides of the bowl as needed. Be careful not to overmix.
  6. Fold in White Chocolate and Blueberries: Gently fold in the white chocolate chips and then the blueberries. Be careful not to break up the blueberries too much.
  7. Scoop and Bake: Using a medium cookie scoop (about 2 tablespoons), place the dough onto the prepared baking sheet about 2 inches apart. Optionally, add a couple of white chocolate chips on top of each cookie for extra visual appeal.
  8. Bake: Bake for 9 minutes, or until the edges are golden. The cookies should be slightly underbaked for a soft texture.
  9. Cool: Let the cookies cool on the baking sheet for 5 minutes before transferring them to a cooling rack. Enjoy!
