Ingredients
Crust and Crumble:
- 3/4 cup butter, softened
- 2/3 cup sugar
- 2/3 cup brown sugar
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 1/3 cups flour
- 1 1/3 cups quick oats (uncooked)
Filling:
- 8 ounces cream cheese
- 1 (14 ounce) can sweetened condensed milk
- 1 teaspoon vanilla extract
- 1 egg yolk
- 1 cup blueberries (or raspberries)
Instructions
- Preheat and Prepare Pan: Preheat your oven to 350°F (177°C) and line a 9×13 inch baking pan with parchment paper or spray it with cooking spray to prevent sticking.
- Make the Crust and Crumble Mixture: In a large bowl, cream together the softened butter, sugar, and brown sugar. Stir in baking soda, salt, flour, and quick oats until well combined.
- Form and Bake Bottom Layer: Press half of the oat mixture firmly into the bottom of the prepared pan, creating an even crust layer. Bake this crust for 13 minutes until slightly set.
- Prepare Cream Cheese Filling: While the crust bakes, place cream cheese in a large bowl and stir until smooth. Gradually whisk in the sweetened condensed milk to create a creamy mixture. Add vanilla extract and egg yolk, mixing thoroughly.
- Assemble Bars: Once the bottom layer is baked, remove from oven and pour the cream cheese filling evenly over it. Carefully spread the filling to cover the crust without mixing layers. Evenly scatter the blueberries on top of the cream cheese layer.
- Add Topping and Final Bake: Sprinkle the remaining oat crumble mixture on top over the berries and gently press it down to secure the topping. Bake for an additional 20 to 25 minutes, or until the edges are golden brown and the filling is set.
- Cool and Serve: Remove bars from oven and allow them to cool completely in the pan. Once cooled, cut into 24 bars. Store leftovers in the refrigerator to maintain freshness.
Notes
- Use fresh or frozen blueberries; if frozen, do not thaw before using to prevent excess moisture.
- For a different flavor, substitute raspberries for blueberries as indicated.
- Make sure the cream cheese is softened to avoid lumps in the filling.
- Press the oat crumble topping lightly to prevent it from sinking into the filling during baking.
- Store bars refrigerated; they taste best chilled and will stay fresh for up to 5 days.
