- 1 box puff pastry sheets (2 sheets)

Instructions
- Preheat the Oven: Preheat your oven to 400°F.
- Prepare Puff Pastry: Unfold the puff pastry sheets and lay them on a cutting board. Using a knife or pizza cutter, cut the pastry into 6 equal rectangles (3 strips per sheet, then cut each strip in half). Place the rectangles on a baking sheet.
- Score the Pastry: Using a small paring knife, lightly score a rectangle 1 inch from the edge of each rectangle. Poke a few holes in the center of the pastry with a fork. This will allow the edges to rise during baking.
- Make the Cream Cheese Filling: In a medium bowl, use a hand mixer to combine the softened cream cheese, granulated sugar, vanilla, and almond extract (if using). Mix until smooth and creamy.
- Assemble the Danishes: Spread an equal amount of the cream cheese filling into the center of each rectangle. In a small bowl, toss the blueberries with lemon juice until coated, then evenly distribute the blueberries on top of the cream cheese.
- Egg Wash: In a small bowl, whisk the egg and water together to create an egg wash. Brush the egg wash around the outer edges of each pastry.
- Bake: Bake in the preheated oven for 18-20 minutes or until the edges of the pastry are golden brown and puffed.
- Cool and Serve: Remove from the oven and allow to cool on a cooling rack for 10 minutes. Dust with powdered sugar before serving.
Notes
- If you don’t have almond extract, you can skip it or substitute with a splash of lemon extract for a different twist.
- For an extra indulgent touch, drizzle a simple glaze made of powdered sugar and milk over the cooled pastries.
- These danishes are best served fresh but can be stored in an airtight container for up to 2 days.
