Ingredients
- 16 ounces sour cream
- 1 ounce taco seasoning (1 packet)
- 10 ounces Rotel diced tomatoes with green chilies (1 can, drained)
- 2 cups shredded cheddar or Mexican-style cheese
Instructions
- In a medium bowl, combine the sour cream and taco seasoning until well mixed.
- Add the drained Rotel and shredded cheese (and Mexicorn if using). Stir until all ingredients are evenly incorporated.
- Cover and refrigerate for at least 1 hour to allow flavors to meld.
- Serve chilled with tortilla chips, Fritos, or fresh vegetables.
Notes
- For added flavor, you can include a can of Mexicorn or diced green onions.
- This dip can be made ahead of time and stored in the fridge for up to 2 days.
- Adjust the taco seasoning to your taste if you prefer more or less spice.
