This easy Boat Dip is thick, creamy, and loaded with savory Tex-Mex flavors. It’s cool, perfectly scoopable, and comes together in minutes with a delicious balance of spice and melted cheese.

Ingredients

  • 16 ounces sour cream
  • 1 ounce taco seasoning (1 packet)
  • 10 ounces Rotel diced tomatoes with green chilies (1 can, drained)
  • 2 cups shredded cheddar or Mexican-style cheese

Instructions

  1. In a medium bowl, combine the sour cream and taco seasoning until well mixed.
  2. Add the drained Rotel and shredded cheese (and Mexicorn if using). Stir until all ingredients are evenly incorporated.
  3. Cover and refrigerate for at least 1 hour to allow flavors to meld.
  4. Serve chilled with tortilla chips, Fritos, or fresh vegetables.

Notes

  • For added flavor, you can include a can of Mexicorn or diced green onions.
  • This dip can be made ahead of time and stored in the fridge for up to 2 days.
