Ingredients
- 2 cups cooked tater tots
- 1 pound turkey breakfast sausage
- 8 large eggs
- ⅓ cup whole milk
- 1½ teaspoons onion powder
- 1 teaspoon garlic powder
- ½ teaspoon salt
- ¼ teaspoon pepper
- 1 cup refried beans
- 6 flour tortillas (8-inch)
- 2 cups shredded cheddar cheese
- 2 large tomatoes, diced
- ¼ cup cilantro, chopped
Instructions
- Cook the Sausage:
- Heat a skillet over medium-high heat and cook the turkey breakfast sausage, breaking it apart as it cooks, until golden brown and fully cooked. Transfer the sausage to a plate and set aside. Drain any excess grease from the skillet.
- Scramble the Eggs:
- In a mixing bowl, whisk together the eggs, whole milk, onion powder, garlic powder, salt, and pepper.
- Scramble the eggs in the same skillet used for the sausage until fully cooked.
- Preheat the Oven:
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Assemble the Burritos:
- Spread a layer of refried beans on each tortilla.
- Add a layer of cooked tater tots, turkey sausage, scrambled eggs, shredded cheese, diced tomatoes, and chopped cilantro.
- Roll the Burritos:
- Roll the tortillas around the filling, folding in the sides as you go to form burritos.
- Freeze (Optional):
- If you’re making these for meal prep, arrange the burritos in a single layer in a freezer bag with the seam facing downward to keep them closed. Seal the bag and store in the freezer for up to 3 months. Thaw them in the fridge overnight before baking.
- Bake the Burritos:
- Place the burritos seam-side down on the prepared baking sheet and bake for 20 minutes, or until the cheese has melted and the burritos are golden brown.
- Serve:
- Garnish with extra cilantro and serve hot!
Notes
- These burritos can be customized with your favorite fillings, such as avocado, salsa, or even hot sauce for a little extra kick.
- For a healthier version, you can swap the tater tots with roasted potatoes or vegetables.
- These burritos are great for meal prep—just wrap them individually and freeze!
