Ingredients

  • 1 pound turkey breakfast sausage

  • 1 cup refried beans
  • 6 flour tortillas (8-inch)
  • 2 cups shredded cheddar cheese
  • 2 large tomatoes, diced
  • ¼ cup cilantro, chopped

Instructions

  1. Cook the Sausage:
  2. Heat a skillet over medium-high heat and cook the turkey breakfast sausage, breaking it apart as it cooks, until golden brown and fully cooked. Transfer the sausage to a plate and set aside. Drain any excess grease from the skillet.
  3. Scramble the Eggs:
  4. In a mixing bowl, whisk together the eggs, whole milk, onion powder, garlic powder, salt, and pepper.
  5. Scramble the eggs in the same skillet used for the sausage until fully cooked.
  6. Preheat the Oven:
  7. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  8. Assemble the Burritos:
  9. Spread a layer of refried beans on each tortilla.
  10. Add a layer of cooked tater tots, turkey sausage, scrambled eggs, shredded cheese, diced tomatoes, and chopped cilantro.
  11. Roll the Burritos:
  12. Roll the tortillas around the filling, folding in the sides as you go to form burritos.
  13. Freeze (Optional):
  14. If you’re making these for meal prep, arrange the burritos in a single layer in a freezer bag with the seam facing downward to keep them closed. Seal the bag and store in the freezer for up to 3 months. Thaw them in the fridge overnight before baking.
