This Buttery Garlic Seared Scallops recipe is quick, easy, and incredibly flavorful. Tender scallops are seared to golden perfection and finished with a buttery garlic lemon sauce—perfect served over pasta for a restaurant-quality dinner at home.

Ingredients

  • 1 tbsp olive oil
  • 1 lb sea scallops
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 3 tbsp Land O Lakes® Butter with Olive Oil & Sea Salt
  • 2 tsp garlic, minced
  • 1 medium lemon (juice of half, slice remaining half)
  • 1 tbsp parsley, chopped

Instructions

  1. Pat the scallops dry with paper towels and season both sides with salt and pepper.
  2. Heat a large cast iron or stainless steel skillet over medium-high heat and add olive oil.
  3. Sear the scallops for 2–3 minutes per side, until browned and cooked through. Remove scallops from the pan and set aside on a plate.
  4. Add the butter to the skillet and let it melt. Stir in the garlic and cook for about 30 seconds, until fragrant.
  5. Squeeze in the juice of half the lemon and stir to combine.
  6. Add the scallops back into the skillet and top with chopped parsley.
  7. Serve over cooked pasta with extra lemon wedges. Enjoy!

Notes

  • Make sure scallops are thoroughly dry before searing for the best crust.
  • Don’t overcrowd the pan or the scallops will steam instead of sear.
  • This dish pairs wonderfully with pasta, risotto, or a fresh green salad.
  • Use regular unsalted butter if you don’t have the Land O Lakes® version.
