Ingredients
- 1 tbsp olive oil
- 1 lb sea scallops
- 1/2 tsp salt
- 1/4 tsp black pepper
- 3 tbsp Land O Lakes® Butter with Olive Oil & Sea Salt
- 2 tsp garlic, minced
- 1 medium lemon (juice of half, slice remaining half)
- 1 tbsp parsley, chopped
Instructions
- Pat the scallops dry with paper towels and season both sides with salt and pepper.
- Heat a large cast iron or stainless steel skillet over medium-high heat and add olive oil.
- Sear the scallops for 2–3 minutes per side, until browned and cooked through. Remove scallops from the pan and set aside on a plate.
- Add the butter to the skillet and let it melt. Stir in the garlic and cook for about 30 seconds, until fragrant.
- Squeeze in the juice of half the lemon and stir to combine.
- Add the scallops back into the skillet and top with chopped parsley.
- Serve over cooked pasta with extra lemon wedges. Enjoy!
Notes
- Make sure scallops are thoroughly dry before searing for the best crust.
- Don’t overcrowd the pan or the scallops will steam instead of sear.
- This dish pairs wonderfully with pasta, risotto, or a fresh green salad.
- Use regular unsalted butter if you don’t have the Land O Lakes® version.
