- 15.25 ounces boxed carrot cake mix (Duncan Hines Perfectly Moist recommended)
- 8 ounces cream cheese, room temperature
- 12 ounces white/vanilla candy melts
- 4 ounces orange candy melts (optional, for drizzle)
Instructions
- Heat Treat the Cake Mix: Pour the dry cake mix into a medium-sized heat-safe bowl. Microwave the cake mix in two 30-second intervals, stirring in between. Allow the cake mix to cool completely before mixing it into the cream cheese.
- Prepare the Cheesecake Mixture: In a medium-sized mixing bowl, beat the cream cheese with a handheld mixer on medium-high speed for 2 to 2½ minutes until smooth. Sprinkle the cooled, dry cake mix over the cream cheese and mix until fully incorporated.
- Chill the Mixture: Tightly cover the mixture and chill in the refrigerator for 2 hours to firm up.
- Form the Bites: Line a baking sheet with parchment paper. Use a 1-tablespoon cookie scoop to scoop the cheesecake dough, then roll it into a ball. Place the balls on the prepared baking sheet. Repeat with the remaining dough.
- Melt the Candy Coating: In a heat-safe bowl, melt the white/vanilla candy melts in 30-second intervals, stirring after each interval until completely smooth.
- Coat the Cheesecake Bites: Roll each cheesecake ball in the melted white/vanilla candy melts. Place the coated cheesecake bite on a fork and gently tap off any excess coating. You can also use a spoon to pour the coating over any bare spots. Use a toothpick to remove excess coating from the bottom of the ball, then gently push the ball back onto the prepared baking sheet.
- Optional Orange Coating: If desired, melt the orange candy melts in a separate bowl. Drizzle the melted orange coating over the white chocolate-covered cheesecake bites for a festive pop of color.
- Chill and Serve: Allow the cheesecake bites to set in the refrigerator for 30 minutes before serving.
