Instructions
- Soak Raisins: Optional but recommended, soak ½ cup raisins in 1 cup warm water or warmed pineapple juice to plump them up. Once softened, drain thoroughly.
- Prepare Carrots: Peel the carrots completely, then grate them finely for the best texture in the salad.
- Mix Dressing with Carrots: In a medium bowl, combine the grated carrots with ½ cup mayonnaise and 1 tablespoon granulated sugar. Toss thoroughly to coat the carrots evenly.
- Add Fruit: Stir in the drained pineapple tidbits and the plumped raisins into the carrot mixture until well combined.
- Chill and Serve: Cover the bowl and refrigerate the salad to chill thoroughly. Before serving, give the salad a good stir to redistribute the dressing and flavors.
