Ingredients
- 1 cup cooked crab meat
- 1 cup cooked shrimp, chopped
- 1 cup shredded cheddar cheese
- 6 large eggs + 1 cup milk
- ½ cup diced onion
- ½ cup diced bell pepper
- ½ teaspoon salt
- ¼ teaspoon pepper
- ¼ teaspoon paprika
- 1 package phyllo pastry or mini pastry shells
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, whisk the eggs and milk until well blended. Fold in the crab, shrimp, cheddar cheese, onion, bell pepper, salt, pepper, and paprika.
- Layer phyllo sheets and cut them into squares, or use ready-made mini pastry shells.
- Fill each pastry shell or phyllo square with the seafood mixture.
- Bake for 20-25 minutes, or until the tops are golden brown and the filling is set.
- Let the mini quiches cool slightly before serving to allow the flavors to meld.
Notes
- For extra flavor, you can add herbs such as parsley or dill to the filling.
- These mini quiches can be made ahead and refrigerated, then baked before serving.
