Ingredients

Pastry

Egg Wash

Seasoning & Cheese

  • 1/2 teaspoon dried mustard powder (or 1/2 tablespoon Dijon mustard)
  • 1 1/2 cups finely grated cheese (use small holes of a box grater or microplane grater)
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper (or pinch of cayenne pepper)
  • 1/2 teaspoon thyme or rosemary (optional)

Instructions

  1. Preheat Oven: Heat oven to 375°F (190°C) and line two large baking sheets with parchment paper for easy cleanup and to prevent sticking.
  2. Make Egg Mixture: In a small bowl, whisk together the egg, water, kosher salt, black pepper, and dried mustard powder or Dijon mustard until well combined. This mixture will help the cheese stick and give the twists a beautiful golden color.
  3. Prepare Puff Pastry: Unroll the two sheets of puff pastry dough onto a lightly floured cutting board or parchment paper. Each sheet should measure roughly 12 x 10 inches (30 x 25 cm); gently stretch if needed to reach this size.
  4. Brush and Sprinkle: Using a pastry brush, lightly coat the puff pastry sheets with the beaten egg mixture. Evenly sprinkle the grated cheese and thyme or rosemary (if using) over the surface. Press gently with the heel of your hand or a rolling pin to ensure the cheese adheres well to the dough.
  5. Cut Strips: With a pizza cutter or sharp knife, slice the first sheet into about 12 strips. Optionally, cut each strip in half to create 48 shorter twists instead of 24 longer ones. Repeat the cutting with the second sheet.
  6. Twist the Strips: Hold each end of a strip and twist in opposite directions to form a corkscrew shape. Place each twist on the prepared baking sheets, spacing them about 1/2 inch (1.3 cm) apart to allow for expansion during baking.
  7. Bake: Bake the cheese twists for 10-15 minutes, or until they turn golden brown and crispy. Rotate the baking sheets halfway through cooking to ensure even browning on all sides.
