Mini cheeseburger cups made with biscuit dough, ground beef, American cheese, and classic burger toppings like pickles, lettuce, and onions. A fun and tasty appetizer or meal for the whole family.

Ingredients

  • 1 pound ground beef
  • 1 cup white onion, diced
  • 2 cloves garlic, minced
  • 5 tablespoons ketchup
  • 2 tablespoons mustard
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 (16-ounce tube) jumbo biscuit dough (8 biscuits)
  • 48 cubes American cheese (deli style)
  • 1 cup dill pickles, chopped
  • 1 ½ cups shredded lettuce
  • ½ cup onion, diced

Instructions

  1. Preheat Oven: Preheat the oven to 375°F. Spray two muffin tins with nonstick cooking spray.
  2. Prepare Biscuit Cups: Cut each biscuit in half and press the dough into the muffin tin to form small cups. Set aside.
  3. Cook Beef Mixture: Heat a large skillet over medium-high heat. Add ground beef and diced onion, cooking until browned. Add minced garlic and cook for another 30 seconds. Stir in ketchup, mustard, salt, and pepper. Combine and remove from heat.
  4. Assemble Cups: Place one cube of cheese in each biscuit cup, then add 2 tablespoons of the beef mixture into each cup, gently packing it down.
  5. Bake First Round: Bake for 6-7 minutes.
  6. Add More Cheese: Remove the cups from the oven, press another cheese cube into each cup, and return them to the oven to bake for an additional 7-8 minutes, or until golden brown.
  7. Cool & Serve: Let the cheeseburger cups cool for 5 minutes before removing them from the tins. Top with chopped dill pickles, diced onions, and shredded lettuce.
