Instructions
- Cook the Pasta: Bring a large pot of salted water to a boil. Cook the rotini pasta according to package directions until al dente. Drain and set aside.
- Cook the Chicken: In a large skillet, heat the olive oil over medium-high heat. Toss the chicken pieces with Cajun seasoning, garlic powder, onion powder, salt, and pepper.

- Make the Cheese Sauce: Stir in the chicken broth and heavy cream, bringing the mixture to a simmer. Add the mozzarella, Parmesan, and cheddar cheeses, stirring until the sauce is smooth and cheesy.
- Combine: Add the cooked rotini and chicken back into the skillet. Toss everything together until well coated in the creamy Cajun garlic sauce. Let it simmer for 2-3 minutes to blend the flavors.
- Serve: Garnish with chopped parsley and serve hot, with extra cheese on top if desired.
