Ingredients

Instructions

  1. Prepare the Fritter Mixture:
    In a large bowl, combine the diced chicken, almond flour, eggs, mozzarella, parmesan (if using), spring onion, jalapeños, parsley, garlic powder, salt, and pepper. Mix well until the ingredients are fully incorporated.
  2. Cook the Fritters:
    Heat olive oil in a large non-stick pan over medium-low heat. Using an ice cream scoop or a large spoon, scoop the chicken mixture and transfer it to the pan. Flatten each scoop with a spoon to form a fritter shape. Cook in batches, making sure not to overcrowd the pan. Fry each fritter for 6–8 minutes, flipping occasionally, until golden brown on both sides. Cook on medium-low heat to ensure the inside is thoroughly cooked without burning the outside.
  3. Serve:
