Ingredients
- 1 ½ lb (700g) skinless, boneless chicken breast, finely diced
- 2 medium eggs
- ⅓ cup almond flour (or coconut flour)
- 1 cup shredded mozzarella cheese
- ¼ cup grated parmesan cheese (optional)
- 3 jalapeño peppers, seeded and finely diced
- 1 spring onion, sliced + extra for garnish
- 2 tbsp parsley, chopped
- ½ tsp garlic powder
- A pinch of salt and freshly ground black pepper
- 1 tbsp olive oil (for frying)
Instructions
- Prepare the Fritter Mixture:
In a large bowl, combine the diced chicken, almond flour, eggs, mozzarella, parmesan (if using), spring onion, jalapeños, parsley, garlic powder, salt, and pepper. Mix well until the ingredients are fully incorporated. - Cook the Fritters:
Heat olive oil in a large non-stick pan over medium-low heat. Using an ice cream scoop or a large spoon, scoop the chicken mixture and transfer it to the pan. Flatten each scoop with a spoon to form a fritter shape. Cook in batches, making sure not to overcrowd the pan. Fry each fritter for 6–8 minutes, flipping occasionally, until golden brown on both sides. Cook on medium-low heat to ensure the inside is thoroughly cooked without burning the outside. - Serve:
Garnish with extra sliced spring onion and serve hot with your favorite dipping sauce like mayonnaise, chipotle aioli, Sriracha, or even ketchup.
