Ingredients
- 1/2 cup mayonnaise
- 2 cloves garlic, minced
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 medium yellow onion, sliced into half-moons
- 1 pound boneless skinless chicken breasts, thinly sliced
- 2 teaspoons Italian seasoning
- 1 teaspoon garlic powder
- 1 teaspoon sea salt
- Pepper, to taste
- 2 tablespoons oil, divided (neutral oil like olive, avocado, or canola)
- 6 hoagie rolls
- 12 slices provolone cheese
Instructions
- In a small bowl, combine mayonnaise and minced garlic. Mix well and refrigerate until ready to use.
- Prepare the peppers and onion by slicing them into thin strips.
- Thinly slice chicken breasts and season with Italian seasoning, garlic powder, salt, and pepper.
- Preheat broiler to high.
- In a large skillet over medium-high heat, heat 1 tablespoon oil. Add seasoned chicken and cook for 5–8 minutes until fully cooked. Remove and set aside.
- Add the remaining tablespoon of oil to the skillet. Add the peppers and onions and sauté for 6–8 minutes, until softened and lightly caramelized.
- Return cooked chicken to the skillet with the vegetables and cook for another 1–2 minutes to combine and reheat.
- Place hoagie rolls on a baking sheet and open them up. Spread garlic mayo on both sides of each roll.
- Fill each roll with the hot chicken and pepper mixture. Top with 2 slices of provolone cheese per sandwich.
- Broil for 1–2 minutes or until cheese is melted and the rolls are lightly toasted. Watch closely to prevent burning.
- Serve immediately while hot and melty.
Notes
- Use rotisserie chicken for a quicker version—just skip the cooking step and heat with veggies.
- Add hot sauce or banana peppers for extra kick.
- Try whole wheat or gluten-free rolls to match dietary needs.
- Leftover filling can be stored in the fridge for up to 3 days.
