Ingredients
Chicken and Vegetables
- 1 rotisserie chicken, meat removed and shredded
- 12-ounce bag frozen peas and carrots
- 1/2 cup celery, chopped
- 1/2 cup onions, chopped
Sauce and Broth
- 1 can (10.5 ounces) cream of chicken soup with herbs
- 1 cup chicken broth
- 1 stick (1/2 cup) unsalted butter, melted
Biscuit Topping
- 1 11oz box biscuit mix (with seasoning packet)
- 2 cups milk
- 1/2 cup shredded cheddar cheese
Instructions
- Preheat Oven: Preheat your oven to 375°F (190°C) to prepare for baking the casserole.
- Prepare Baking Dish: Grease your baking dish and pour the melted unsalted butter into it, coating the bottom to add flavor and prevent sticking.
- Layer Chicken and Vegetables: Spread the shredded rotisserie chicken evenly in the dish. In a separate bowl, mix the frozen peas and carrots with chopped onions and celery, then layer this vegetable mixture evenly over the chicken.
- Make Biscuit Mixture: In a medium bowl, combine the biscuit mix, contents of the seasoning packet, milk, and half of the shredded cheddar cheese. Stir until the mixture is smooth and well combined.
- Prepare Creamy Sauce: In another bowl, mix the cream of chicken soup with chicken broth until you achieve a gravy-like consistency. Pour this mixture evenly over the vegetables and chicken in the baking dish, but do not stir; allow it to settle naturally.
- Add Biscuit Topping: Carefully pour the biscuit mixture over the top of the creamy mixture in the casserole dish, without mixing the layers.
- Bake Casserole: Place the baking dish in the preheated oven and bake for 45 minutes to 1 hour, or until the biscuit crust is a golden brown and the filling is bubbling.
