- 1 1/2 lb Springer Mountain Farms chicken breast
- 1 1/2 tsp paprika (OliveNation)
- 1 1/2 tsp oregano
- 1 tsp garlic powder (OliveNation)
- 1/2 tsp thyme
- 1/2 tsp black pepper
- 1/2 tsp salt
Pasta
- 12 oz gluten free farfalle pasta
Sauce
- 4 tbsp butter
- 2 tsp dry shallots
- 2 tsp Italian seasoning
- 1/2 cup chicken broth
- 2 tbsp Gluten Free 1:1 Flour
- 3 cups heavy cream
- 12 oz shredded parmesan cheese
- 1/4 cup pasta water
- 1/2 tsp salt
- 1 tsp garlic powder
Instructions
- Boil Pasta: In a large pot, bring water to a boil and cook the gluten-free farfalle according to package instructions until al dente. Drain and set aside.
- Mix Chicken Seasonings: In a small bowl, combine paprika, oregano, garlic powder, thyme, salt, and black pepper.
- Pound Chicken: Pound the chicken breasts lightly to thin them for even cooking.
- Season Chicken: Season both sides of the chicken breasts generously with the prepared seasoning mixture.
- Heat Olive Oil: In a large skillet, heat the olive oil over medium heat until hot.
- Sear Chicken: Place the chicken breasts into the skillet and sear for 5 minutes on each side until browned.
- Simmer Chicken: Flip the chicken once seared, reduce heat to medium-low, cover with a lid, and cook for 10-12 minutes more until the internal temperature reaches 165°F.
- Rest Chicken: Remove the chicken from the skillet and transfer to a cutting board to rest.
- Melt Butter: In the same skillet, add the butter and allow it to melt completely over medium heat.
- Add Seasonings to Sauce: Stir in dry shallots, garlic powder, and Italian seasoning, simmering the mixture for 1 minute.
- Add Flour: Sprinkle in the gluten-free flour and stir well, scraping the bottom of the pan to combine.
- Add Broth and Cream: Slowly pour in chicken broth and heavy cream, whisking continuously to form a smooth, creamy sauce.
- Add Parmesan: Stir in shredded Parmesan cheese until fully melted and incorporated.
- Simmer Sauce: Continue cooking the sauce, stirring occasionally, until it reaches your desired thickness.
- Toss Pasta: Add the cooked pasta to the skillet and toss well to coat evenly with the sauce.
- Adjust Sauce Consistency: Add pasta water one tablespoon at a time to thin the sauce as needed.
- Slice Chicken: Slice the rested chicken breasts into strips or bite-size pieces.
- Combine and Serve: Add the sliced chicken to the pasta and gently stir to combine. Serve immediately.
