Ingredients

  • 1 pound boneless, skinless chicken breast
  • 1 bunch fresh mint leaves
  • 1 small bunch flat-leaf Italian parsley
  • 2 small shallots
  • 2 garlic cloves
  • 1 large egg
  • 1/4 cup dried breadcrumbs
  • 2 tablespoons shawarma spice
  • 1 teaspoon salt

Instructions

  1. Add chicken breast to a food processor and grind until minced.
  2. Add mint, parsley, shallots, garlic, egg, breadcrumbs, shawarma spice, and salt. Pulse until fully combined into a uniform mixture.
  3. Scoop about 2 tablespoons of the mixture and form into small balls.
  4. Preheat air fryer to 350°F. Lightly grease the basket with cooking spray or olive oil.
  5. Arrange kofta balls in a single layer, leaving space between each.
  6. Air fry for 13–15 minutes or until internal temperature reaches 165°F.
  7. Serve immediately or store in an airtight container in the refrigerator for up to 5 days.

  • Serve with hummus, tzatziki, or tahini sauce for dipping.
  • Can be shaped into patties instead of balls for wraps and sandwiches.
