Ingredients
- For the Chicken Satay:
- 1 pound boneless, skinless chicken breasts or thighs, cut into bite-sized pieces
- 1 teaspoon ground coriander
- 1 teaspoon ground cumin
- ¼ teaspoon ground turmeric
- 2 stalks lemongrass, minced (or 1 teaspoon lemon zest)
- 1 shallot, minced
- 2 cloves garlic, minced/grated
- 1 tablespoon galangal (or ginger), minced/grated
- 1 lime, zest and juice
- 1 bird’s eye chili, minced (or 1 tablespoon sriracha)
- 2 tablespoons fish sauce (or soy sauce)
- 2 tablespoons palm sugar (or brown sugar)
- 1 tablespoon oil
- For the Spicy Peanut Dipping Sauce:
- ½ cup peanut butter
- 2 tablespoons soy sauce
- 1 tablespoon rice vinegar
- 1 tablespoon honey
- 1 teaspoon lime juice
- 1 tablespoon sriracha (or more for extra heat)
- ¼ cup warm water (to adjust consistency)
Instructions
- Marinate the Chicken: In a bowl, mix the coriander, cumin, turmeric, lemongrass, shallot, garlic, galangal, lime zest and juice, chili, fish sauce, palm sugar, and oil. Marinate the chicken in this mixture for at least 30 minutes to overnight in the fridge.
- Grill the Chicken: Skewer the marinated chicken pieces and grill over medium-high heat for about 2-4 minutes per side, or until fully cooked and nicely charred.
- Make the Peanut Sauce: While the chicken is grilling, combine the peanut butter, soy sauce, rice vinegar, honey, lime juice, and sriracha in a bowl. Stir in warm water a little at a time until the sauce reaches your desired consistency.
- Serve: Once the chicken is cooked, serve it with the spicy peanut dipping sauce on the side for dipping.
Notes
- For Extra Heat: Add more sriracha or chopped bird’s eye chili to the peanut sauce for a spicier kick.
