Ingredients

  • 8 ounces cream cheese (227g), softened
  • 1/2 cup salted butter (114g), softened
  • 1/2 cup unsweetened cocoa powder (55g), sifted
  • 1/4 teaspoon salt
  • 6 cups powdered sugar (720g), plus more if needed
  • 1/4 cup heavy cream
  • 2 teaspoons vanilla extract

Instructions

  1. Cream together the softened cream cheese, salted butter, sifted cocoa powder, and salt until smooth and well combined.
  2. Add the powdered sugar, one cup at a time, mixing after each addition until fully incorporated.
  3. Add the heavy cream and vanilla extract. Beat at high speed for about 2 minutes, until the frosting is light and fluffy.
  4. If needed, add more powdered sugar 1/2 cup at a time to reach the desired consistency.
  5. Use immediately to frost cakes, cupcakes, cookies, or store as directed.

Notes

  • This is a soft frosting that pipes and holds shape well but does not crust like traditional buttercream.
  • Frosting can be left out at room temperature for up to 24 hours due to the high sugar content.
  • For best results, prepare and use the frosting the same day it’s made.
