Ingredients

  • ¼ cup cilantro, minced
  • 3 tablespoons olive oil
  • 3 tablespoons lime juice (about 2 large limes)
  • 1 tablespoon taco seasoning (optional)
  • 1 teaspoon salt
  • 1 teaspoon pepper (or lemon pepper for added flavor)
  • 1 pound boneless, skinless chicken breasts (3 to 4 breasts)

Instructions

  1. Season the chicken breasts with salt and pepper, then place them in a large Ziploc bag.
  2. Add the cilantro, olive oil, lime juice, and taco seasoning (if using). Seal the bag, removing any excess air, and gently massage the marinade into the chicken.
  3. Marinate the chicken for at least 30 minutes and up to 2 hours in the refrigerator.
  4. Preheat the grill to 350-400°F (175-200°C).
  5. Place the chicken breasts on the grill and cook each side for 6 minutes, or until the internal temperature reaches 165°F (75°C).
  6. Let the chicken rest for 5 minutes before serving.
  7. Optional: Double the marinade and use it to baste the chicken while grilling for extra flavor!
