Ingredients
- ¼ cup cilantro, minced
- 3 tablespoons olive oil
- 3 tablespoons lime juice (about 2 large limes)
- 1 tablespoon taco seasoning (optional)
- 1 teaspoon salt
- 1 teaspoon pepper (or lemon pepper for added flavor)
- 1 pound boneless, skinless chicken breasts (3 to 4 breasts)
Instructions
- Season the chicken breasts with salt and pepper, then place them in a large Ziploc bag.
- Add the cilantro, olive oil, lime juice, and taco seasoning (if using). Seal the bag, removing any excess air, and gently massage the marinade into the chicken.
- Marinate the chicken for at least 30 minutes and up to 2 hours in the refrigerator.
- Preheat the grill to 350-400°F (175-200°C).
- Place the chicken breasts on the grill and cook each side for 6 minutes, or until the internal temperature reaches 165°F (75°C).
- Let the chicken rest for 5 minutes before serving.
- Optional: Double the marinade and use it to baste the chicken while grilling for extra flavor!
Notes
- For a more intense lime flavor, add a bit of lime zest to the marinade.
- This recipe works well with chicken thighs as well. You can adjust the cooking time depending on the cut of chicken.
