A simple and versatile crepe recipe that creates thin, delicate crepes, perfect for both sweet and savory fillings.

Ingredients

  • 1 + 1/4 cups milk
  • 2 large eggs
  • 2 tbsp melted butter
  • 1 tsp vanilla extract
  • 1 + 1/2 tbsp sugar
  • 1/8 tsp salt
  • 1 cup all-purpose flour

Instructions

  1. Blend all ingredients together in a mixing bowl or blender. Refrigerate the batter for 30 to 60 minutes to allow it to rest.
  2. Heat a nonstick skillet over medium heat. Add a bit of melted butter to the pan and pour in 1/4 cup of the batter. Swirl the skillet to coat it evenly with the batter.
  3. Cook the crepe for about 1 minute, or until the edges are lightly browned. Flip it over and cook for another 30 seconds on the other side.
  4. Repeat the process with the remaining batter. Serve with your favorite fillings and enjoy!

Notes

  • For savory crepes, omit the sugar and vanilla extract from the batter.
  • Make sure the skillet is well-heated before adding the batter to ensure the crepes cook evenly.
  • If the batter is too thick after resting, add a little more milk to reach the desired consistency.
