Ingredients
Basic Sauce Ingredients
- 1 cup cottage cheese
- ½ cup milk of choice
- 1 small garlic clove
- ½ teaspoon salt
- ½ teaspoon pepper
- ½ teaspoon Italian seasoning
- ¾ cup grated Parmesan cheese
Instructions
- Blend the Base: Combine the cottage cheese, milk, garlic, salt, and pepper in a blender and blend until completely smooth. Taste the mixture and adjust seasoning with more salt or pepper if needed.
- Heat and Incorporate Cheese & Seasoning: If not using immediately, transfer the blended sauce into a small saucepan and heat over medium-low heat. Whisk in the grated Parmesan and Italian seasoning until the sauce is smooth and well combined. Store in the refrigerator for 3 to 4 days until ready to use.
- Serve Immediately Option: If using the sauce right away, pour the blended base onto cooked pasta, then stir in the Parmesan and Italian seasoning directly. Toss everything together until the cheese melts and the sauce is smooth. Add a splash of reserved pasta water if a thinner, more saucy consistency is desired.
- Final Serving: Serve the pasta warm, garnished with freshly cracked black pepper and your preferred fresh herbs for added flavor and aroma.
Notes
- Use milk of your choice: dairy or plant-based milk works well to adjust creaminess and flavor.
- For a smoother sauce, ensure the cottage cheese is well blended.
- Adding pasta water helps adjust the sauce consistency without diluting flavor.
- Store any leftover sauce in an airtight container in the refrigerator for up to 4 days.
- Fresh herbs like basil, parsley, or oregano pair nicely with this sauce.
