Instructions

  1. Prepare the Chicken: Carefully fillet each chicken breast into two thinner cutlets using a sharp knife, or use pre-cut thin chicken breasts to ensure even cooking.
  2. Season and Coat: Season each chicken piece evenly with Italian seasoning, salt, and black pepper. Sprinkle the flour over both sides and rub it in gently to coat the chicken well.
  3. Cook Chicken: Heat a large skillet over medium heat. Add olive oil and 1 tablespoon of butter. Once hot, place the chicken in the skillet and cook each side for about 4 minutes until golden brown and fully cooked. Remove chicken from skillet and cover to keep warm.
  4. Prep Garlic: Peel the garlic cloves and carefully smash each clove with the side of a large chef’s knife by pressing with the heel of your hand, releasing their flavor.
  5. Sauté Garlic: In the same skillet, add the remaining 1 tablespoon of butter. Add the smashed garlic, reduce heat to medium-low, and sauté for about 3 minutes until garlic is lightly browned and fragrant. Stir frequently to prevent burning.
