Ingredients
Chicken
- 2 boneless, skinless chicken breasts (about 1.3 lbs. total)
- 1/2 tsp Italian seasoning
- 1/2 tsp salt
- 1/4 tsp freshly cracked black pepper
- 1/4 cup all-purpose flour
Cooking
- 2 Tbsp olive oil
- 2 Tbsp butter, divided
- 1 whole garlic bulb (about 8-9 garlic cloves)
Sauce
- 1 cup chicken broth
- 3/4 cup heavy cream
- 1/2 tsp garlic powder
- Salt and Pepper to taste
Instructions
- Prepare Chicken: Using a sharp knife, carefully fillet each chicken breast into two thinner cutlets or use thin-cut chicken breasts for even cooking.
- Season and Flour: Season the chicken breasts evenly with Italian seasoning, salt, and black pepper. Sprinkle all-purpose flour over both sides and rub it in so each piece is well coated.
- Cook Chicken: Heat a large skillet over medium heat and add olive oil along with 1 tablespoon of butter. When hot, add the chicken cutlets and cook about 4 minutes per side until golden brown and cooked through. Transfer the cooked chicken to a clean plate and cover to keep warm.
- Prep Garlic: While chicken cooks, peel the garlic cloves from the bulb. Using the side of a chef’s knife, gently smash each clove by pressing down with the heel of your hand.
- Sauté Garlic: In the same skillet, add the remaining 1 tablespoon butter. Turn the heat to medium-low and add the smashed garlic cloves. Sauté for about 3 minutes, stirring frequently until the garlic is lightly browned and fragrant, making sure it does not burn.
- Make Sauce: Pour chicken broth and heavy cream into the skillet with garlic. Add garlic powder and stir well, scraping up any browned bits from the pan bottom. Let the sauce simmer for 8-10 minutes until it thickens and reduces by about half. Taste and adjust salt and pepper as needed (suggested extra: ⅛ tsp salt and ⅛ tsp pepper).
- Combine and Serve: Return the cooked chicken breasts to the skillet and spoon the creamy garlic sauce over them. Allow to heat through briefly. Optionally garnish with fresh chopped parsley before serving. Enjoy your creamy, flavorful garlic chicken!
