Instructions
- Preheat and Prepare Baking Sheet: Preheat the oven to 425°F. Line a rimmed baking sheet with high-heat-resistant parchment paper and coat it with olive oil spray to prevent sticking and promote even crisping.
- Slice Zucchini: Slice the zucchini into 1/8-inch-thick rounds for optimal crispiness and uniform cooking.
- Salt and Drain Excess Moisture: Arrange the zucchini rounds on paper towels, sprinkle with kosher salt, and let stand at room temperature for 30 minutes. This draws out excess water. Afterward, blot them thoroughly with paper towels to remove surface water and some salt; do not rinse to maintain the seasoning.
- Arrange and Initial Bake: Place zucchini slices in a single layer on the prepared baking sheet. Spray them lightly with olive oil and bake for 15 minutes to begin the crisping process.
- Season with Spices and Cheese: Remove the baking sheet from the oven. Sprinkle the zucchini slices evenly with black pepper, garlic powder, and grated Parmesan cheese. There is no need to flip the slices.
- Finish Baking: Return the baking sheet to the oven and bake for an additional 15 to 20 minutes until slices are browned and crispy. Since they may crisp unevenly, check every 5 minutes, remove crispy chips to a plate, and continue baking the softer ones.
- Serve Immediately: Enjoy the zucchini chips fresh from the oven for the best texture and flavor.
