- 1 tbsp rice vinegar
- 2 tbsp sugar
- 1 dash sesame oil
- 1/2 tsp salt
Instructions
- Combine the chopped cucumbers and sliced green onions in a bowl and set aside.
- In a small bowl, whisk together the Thai sweet chili sauce, rice vinegar, sugar, sesame oil, and salt to make the dressing.
- Toss the dressing with the cucumbers and onions until well coated.
- Sprinkle the chopped roasted peanuts on top.
- Keep chilled and enjoy within 2 hours for the best crunch and flavor.
Notes
- For extra flavor, add a dash of lime juice or fresh cilantro.
- Serve immediately after mixing for the best crunch, but it can be stored in the refrigerator for up to 24 hours.
