Ingredients
- 20 large marshmallows (frozen)
- 2/3 cup whole milk
- 1 large egg (room temperature)
- 1/4 teaspoon vanilla extract
- 1 1/3 cups buttermilk pancake mix (Pearl Milling Company brand used)
- Canola oil for frying (enough to fill 3-4 inches deep in a 5-quart Dutch oven or to the fill line of an electric deep fryer)
- Optional Toppings:
- Powdered sugar (sifted)
- Whipped cream
- Chocolate sauce
- Rainbow jimmie sprinkles
Instructions
- Freeze Marshmallows: Place the marshmallows in the freezer for at least 30 minutes to keep them firm during frying.
- Prepare the Frying Setup: Line a large rimmed baking sheet with paper towels and place a wire rack on top. Set aside.
- Heat the Oil: Fill a large pot with canola oil to about 3-4 inches deep, or fill the oil to the line in an electric deep fryer. Heat the oil to 375°F. If using a pot on the stove, attach a candy thermometer to ensure the oil stays between 365°F and 375°F.
- Make the Batter: In a small bowl, whisk together the whole milk, egg, and vanilla extract until well combined. In a large bowl, add the buttermilk pancake mix and create a well in the center. Pour in the milk mixture and gently whisk until just combined. The batter should be thick and slightly lumpy.
- Coat the Marshmallows: Take 4–5 frozen marshmallows and dip them into the batter, using your fingers to coat them completely.
- Fry the Marshmallows: Carefully drop the coated marshmallows into the hot oil. Fry for 25-30 seconds on each side, or until golden brown. Flip gently using a slotted spoon if needed.
- Drain: Remove the deep-fried marshmallows from the oil with a slotted spoon and place them on the prepared baking sheet to drain excess oil. Repeat the process with the remaining marshmallows.
- Serve: Serve the deep fried marshmallows on a large plate, lightly dust with powdered sugar, and top with whipped cream, chocolate sauce, or rainbow jimmie sprinkles as desired.
Notes
- Make sure the oil is at the correct temperature before adding the marshmallows to avoid undercooking or burning.
- If you prefer a fluffier texture, you can make the batter slightly thinner by adding a bit more milk.
- These are best served immediately while hot and crispy!
