Ingredients

  • 16 oz baguette, cut into ½-inch slices
  • ½ tsp garlic powder
  • 3 tbsp extra virgin olive oil
  • 3 cloves garlic, minced
  • 4 large beef steak tomatoes, diced (or 78 Roma tomatoes)
  • ¼ cup purple onion, diced
  • ¼ cup basil, thinly sliced into ribbons
  • 1 tbsp balsamic vinegar
  • 1 tsp salt
  • ½ tsp black pepper

Instructions

  1. Toast the Bread:
    Preheat your oven broiler to high. Line a baking sheet with foil and arrange the baguette slices. Lightly spritz with olive oil cooking spray or brush with olive oil and sprinkle with garlic powder. Toast the bread under the broiler for 1–2 minutes until golden, then flip the bread and repeat on the other side. Remove from the oven and set aside.
  2. Make the Tomato Mixture:
    Meanwhile, heat 3 tbsp of olive oil in a small skillet over medium heat. Add minced garlic and sauté for a few seconds until fragrant. Be careful not to burn the garlic. Remove the skillet from the heat and let the garlic oil cool. Once cooled, transfer it to a large bowl and add diced tomatoes, purple onion, basil, balsamic vinegar, salt, and black pepper. Gently stir to combine.
  3. Assemble and Serve:
    Spoon the bruschetta mixture over the toasted baguette slices and serve immediately.
