Ingredients
- 1 pound chicken breasts, thinly sliced into strips
- 1/2 cup plain Greek yogurt
- 1/4 cup olive oil
- 1/2 lemon, juiced
- 2 tablespoons red vinegar
- 1 tablespoon garlic paste or finely minced garlic
- 1 teaspoon dried oregano
- 1 teaspoon paprika
- 1 teaspoon salt
- 1 teaspoon ground black pepper
- 1 tablespoon olive oil (for cooking)
- 4–6 Greek-style pita breads
- 2 cups chopped romaine lettuce
- 1 1/2 cups cherry tomatoes, cut into thirds
- 1 cucumber, deseeded and diced
- 1/2 red onion, diced
- Tzatziki sauce, for serving
Instructions
- Add the chicken strips to a large bowl and set aside.
- In a small bowl, mix together the Greek yogurt, olive oil, lemon juice, red vinegar, garlic, oregano, paprika, salt, and pepper. Pour the marinade over the chicken and stir to coat evenly. Cover and refrigerate for at least 30 minutes or up to 8 hours.
- Heat a large skillet over medium heat and add 1 tablespoon of olive oil. Remove the chicken from the marinade and cook for about 6 minutes on each side, or until golden brown and fully cooked.
- Transfer the cooked chicken to a plate and let rest for 5 minutes. Then slice into strips.
- While the chicken is resting, warm the pita breads in a skillet over medium heat for 1 minute per side.
- Assemble the gyros by layering romaine lettuce, sliced tomatoes, cucumber, red onion, and chicken on each pita.
- Top with a generous drizzle of tzatziki sauce and serve immediately.
Notes
- For extra flavor, marinate the chicken overnight if time allows.
- Serve with extra tzatziki or hummus on the side.
- Make it low-carb by serving the filling in lettuce wraps instead of pita.
- Leftover chicken can be stored in the fridge for up to 3 days.
