Ingredients

  • 6 cups whole strawberries, hulled
  • ¾ cup granulated sugar
  • 3 tablespoons cornstarch
  • ½ cup water
  • 1 9-inch pie crust, baked
  • 1 cup heavy whipping cream
  • 2 tablespoons powdered sugar

Instructions

  1. Mash 1 cup of strawberries with a fork or in a food processor and set aside.
  2. In a small saucepan, whisk together the sugar and cornstarch. Stir in the water and the mashed strawberries. Bring the mixture to a boil over medium heat, stirring constantly. Let it boil for an additional 3 minutes until the mixture thickens and becomes translucent. Set aside to cool for 10 minutes.
  3. While the glaze cools, arrange the remaining strawberries in the pie crust. Cut some of the berries in half to fit them better in the crust.
  4. Pour the cooled glaze over the strawberries, ensuring that all the berries are coated and no dry spots remain.
  5. Chill the pie in the refrigerator for 2-3 hours until set. Serve chilled and enjoy!
