Ingredients
- 6 cups whole strawberries, hulled
- ¾ cup granulated sugar
- 3 tablespoons cornstarch
- ½ cup water
- 1 9-inch pie crust, baked
- 1 cup heavy whipping cream
- 2 tablespoons powdered sugar
Instructions
- Mash 1 cup of strawberries with a fork or in a food processor and set aside.
- In a small saucepan, whisk together the sugar and cornstarch. Stir in the water and the mashed strawberries. Bring the mixture to a boil over medium heat, stirring constantly. Let it boil for an additional 3 minutes until the mixture thickens and becomes translucent. Set aside to cool for 10 minutes.
- While the glaze cools, arrange the remaining strawberries in the pie crust. Cut some of the berries in half to fit them better in the crust.
- Pour the cooled glaze over the strawberries, ensuring that all the berries are coated and no dry spots remain.
- Chill the pie in the refrigerator for 2-3 hours until set. Serve chilled and enjoy!
Notes
- For an extra creamy topping, whip the heavy cream with powdered sugar and serve it with the pie.
- If you’d like to add a bit of flair, garnish the pie with mint leaves or more fresh whipped cream.
- For best results, chill the pie for the full 2-3 hours so the glaze sets properly.
