Garlic Paste
- 6 fat cloves garlic
- Pinch of coarse salt
Base Ingredients
- 2 tablespoons mayonnaise
- 2 tablespoons red wine vinegar
- Juice of 1 lemon
- 1 teaspoon Dijon mustard
Flavor Enhancers
- 1/3 cup olive oil
- 1/2 teaspoon dried oregano
- 2 tablespoons freshly grated Parmesan cheese
- Salt and fresh cracked pepper, to taste
Instructions
- Make Garlic Paste: Mince the garlic cloves finely and sprinkle with a bit of coarse salt. Use the back of your knife to smash the garlic into a soft paste by pressing down and dragging the knife towards you repeatedly until smooth.
- Combine Base Ingredients: Transfer the garlic paste into a small mixing bowl. Add the mayonnaise, red wine vinegar, squeezed lemon juice, and Dijon mustard. Whisk vigorously to combine all ingredients evenly.
- Add Flavor Enhancers: Pour in the olive oil, sprinkle in the dried oregano, and add the freshly grated Parmesan cheese. Whisk again until the dressing is smooth and creamy.
- Adjust Seasoning: Taste your dressing and season with salt and fresh cracked pepper to your liking. Adjust consistency and tanginess by adding more olive oil to mellow or more lemon juice or vinegar to increase the tang.

- For best flavor, use fresh garlic rather than pre-minced garlic.
- This dressing pairs exceptionally well with green salads, roasted vegetables, and as a dip for crusty bread.
- Store leftover dressing covered in the refrigerator for up to a week.
- If Parmesan is not preferred, it can be omitted for a dairy-free version.
