Instructions
- Combine and heat ingredients: In a medium saucepan over low heat, combine the pumpkin puree, maple syrup, sugar, pumpkin pie spice, and non-dairy milk. Whisk continuously until all ingredients are well incorporated and there are no lumps of pumpkin, ensuring a smooth texture.
- Add coffee and blend flavors: Stir in the coffee, espresso shots, or instant coffee and whisk until fully combined. This creates the signature pumpkin spice latte flavor.
- Taste and sweeten: Sample the latte and adjust sweetness by adding more sugar or maple syrup if desired, according to your preference.
- Serve and garnish: Pour the latte into mugs and top with vegan whipped cream, a drizzle of vegan caramel sauce, a sprinkle of cinnamon, and optionally add a cinnamon stick for stirring and presentation.
Notes
- If pumpkin pie spice isn’t available, substitute with a blend of cinnamon, a pinch of nutmeg, ground cloves, and ground ginger.
- For a decaffeinated or coffee-free version, replace the coffee with additional non-dairy milk and adjust sweetness accordingly.
- If you don’t have vegan whipped cream, blend the entire latte in a blender until smooth and frothy, then top as desired.
