This Easy Focaccia with Tomatoes comes together effortlessly using frozen dinner rolls, cherry tomatoes, and crumbled feta — no kneading required! It’s golden, fluffy, and perfect as a snack, appetizer, or side.

  • Total Time: 40 minutes
  • Yield: 36 servings

Ingredients

  • 36 Rhodes dinner rolls, thawed and risen according to package instructions
  • 1 cup cherry tomatoes, sliced
  • 2 teaspoons dried oregano
  • Salt, to taste
  • 1 cup feta cheese crumbles
  • Olive oil or cooking spray, for brushing

Instructions

  1. Lightly grease a 13×18-inch sheet pan with butter. Arrange thawed and risen dinner rolls on the pan, spacing them about 1/2 inch apart.
  2. Brush the tops of the rolls lightly with olive oil or cooking spray. Cover with plastic wrap and let rest for 4–6 hours, or as directed on the package.
  3. Preheat oven to 350°F (175°C).
  4. Using your fingertips, press small indentations into the tops of the dough.
  5. Sprinkle sliced cherry tomatoes, dried oregano, salt, and feta cheese evenly over the dough.
  6. Bake for 23–25 minutes, or until golden brown.
  7. Serve warm and enjoy!

Notes

  • Use multi-colored cherry tomatoes for a vibrant look.
  • Add a drizzle of balsamic glaze before serving for extra flavor.
  • Best served fresh, but leftovers can be reheated in a toaster oven.
