Ingredients
- 1¼ cups long grain rice
- 1 (10.5 oz) can French onion soup
- 1 (10.5 oz) can beef consommé
- 8 tablespoons unsalted butter, cut into thin slices
- ½ teaspoon black pepper
- Fresh chopped parsley (optional, for garnish)
Instructions
- Preheat the oven to 425°F (220°C).
- Add the rice to an 8×8-inch baking dish.
- Pour in the French onion soup and beef consommé. Stir to combine.
- Lay butter slices evenly over the top of the rice mixture.
- Cover the dish tightly with aluminum foil and bake for 30 minutes.
- Remove foil and continue baking uncovered for another 30 minutes, or until the rice is tender and the top is golden.
- Garnish with chopped parsley if desired. Serve hot.
Notes
- For extra richness, use salted butter or add a sprinkle of Parmesan before the final bake.
- This recipe doubles well in a 9×13-inch dish—just adjust bake time slightly if needed.
- Perfect side dish for roast meats, chicken, or grilled vegetables.
- Leftovers reheat well in the microwave or oven.
