Instructions
- Prepare the Granola Dough: In a medium bowl, combine the oats, cinnamon, almond butter, honey, and vanilla extract. Mix thoroughly until the mixture forms a sticky dough. If the mixture feels dry or crumbly, add a little more almond butter and honey to achieve a cohesive texture.
- Form the Granola Cup Bases: Line a muffin pan with paper muffin liners for easy removal. Spoon a portion of the granola dough into the bottom of each muffin cup. Press firmly and evenly with your fingers to create a sturdy and compact base that will hold the yogurt filling.
- Add Yogurt and Toppings: Spoon about 1 to 2 tablespoons of Greek yogurt into each granola base, filling the muffin cups. Top each filled cup with fresh berries and sprinkle any leftover granola dough over them for extra texture and flavor.
- Freeze to Set: Place the muffin pan in the freezer and allow the cups to freeze for at least 4 hours, or until fully set. Before serving, let the granola cups thaw slightly for a few minutes to soften just enough for easy eating.
