Instructions
- Preheat and Prepare: Preheat your oven to 375℉. Prepare a muffin tin by lining it with muffin liners or spraying with cooking spray to prevent sticking.
- Mix Dry Ingredients: In a large bowl, whisk together the all-purpose flour, white sugar, baking soda, and salt until evenly combined. Set this bowl aside for later.
- Prepare Wet Ingredients: In a medium bowl, microwave the butter for 20-25 seconds until it is soft and mostly melted. Add the olive or avocado oil, plain Greek yogurt, milk, egg, and vanilla extract to the butter. Whisk all wet ingredients together until the mixture is smooth and well combined, being careful not to overmix.
- Combine Wet and Dry Mixtures: Pour the wet ingredient mixture into the bowl of dry ingredients. Gently stir with a spatula or large spoon until just combined; the batter should be slightly lumpy. Fold in the rainbow sprinkles gently to distribute evenly without overmixing.
- Fill Muffin Cups: Spoon the batter into the prepared muffin cups, filling each nearly full. For extra color and fun, sprinkle a few additional rainbow sprinkles on top of each muffin.
- Bake: Place the muffin tin in the preheated oven and bake at 375℉ for 15-17 minutes. The muffins are done when a toothpick inserted into the center comes out clean. Check at 15 minutes, as oven times may vary.
- Cool and Serve: Allow the muffins to cool in the muffin tin for 5-10 minutes before removing. Muffins can be enjoyed warm or allowed to cool completely, especially if using liners, which make removal easier once cooled fully.
