Ingredients

  • 1 pound large shrimp (peeled and deveined)
  • ¼ cup olive oil

  • 1 tablespoon lemon juice
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • Pinch of cayenne pepper (adjust to spice preference)

Instructions

  1. Make the Marinade: In a small mixing bowl, whisk together the olive oil, lemon juice, cilantro, parsley, garlic, salt, black pepper, and a pinch of cayenne pepper.
  2. Marinate the Shrimp: Place the shrimp in a bowl and pour ¾ of the marinade over the shrimp. Mix gently until the shrimp are well coated. Cover and let marinate for 30 minutes to 1 hour in the fridge.
  3. Prepare the Shrimp for Grilling: Thread the marinated shrimp onto skewers, making sure to include some of the garlic and herbs from the marinade on each skewer.
  4. Grill the Shrimp: Heat a grill or grill pan over medium-high heat. Once hot, place the shrimp skewers on the grill and cook for 2-3 minutes per side or until the shrimp turn pink and opaque.
