Ingredients
Potatoes
- 1 1/2 pounds baby red potatoes, halved
Seasoning and Coating
- 1/4 cup olive oil
- 2 teaspoons garlic, minced
- 1 1/2 teaspoons salt
- 1/2 teaspoon pepper
- 1 teaspoon Italian seasoning
- 1/4 cup finely grated parmesan cheese
- 2 tablespoons chopped fresh parsley
- Cooking spray
Instructions
- Preheat Oven: Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius). Line a sheet pan with aluminum foil and coat the foil lightly with cooking spray to prevent sticking.
- Prepare Potatoes: In a large mixing bowl, add the halved baby red potatoes. Pour in the olive oil, minced garlic, salt, pepper, Italian seasoning, and grated parmesan cheese. Toss everything together thoroughly to ensure the potatoes are evenly coated with the seasoning and cheese.
- Arrange on Baking Sheet: Spread the coated potatoes in a single layer on the prepared baking sheet. Make sure they have enough space to roast properly and crisp up on all sides.
- Roast Potatoes: Place the baking sheet in the preheated oven and roast the potatoes for 35 to 40 minutes, or until they are golden brown and fork tender. Stir or flip the potatoes halfway through roasting to promote even browning.
- Garnish and Serve: Once roasted, remove the potatoes from the oven and sprinkle with freshly chopped parsley. Serve them hot as a delicious side dish to complement any meal.
Notes
- Use baby red potatoes for quicker cooking and a tender interior.
- Ensure potatoes are cut into uniform sizes for even roasting.
- Feel free to adjust garlic and seasoning amounts according to your taste preference.
- Parmesan adds a flavorful crust; you can omit it for a dairy-free version.
- Fresh parsley adds color and freshness but can be substituted with other fresh herbs like thyme or rosemary.
- For crispier potatoes, avoid overcrowding the baking sheet.
