Ingredients
Chicken
- 1 pound chicken tenderloins, cut into bite-size pieces
- 1 tablespoon oil
- ¾ teaspoon paprika
- ¾ teaspoon poultry seasoning
- ½ teaspoon black pepper
- 2 tablespoons butter
- 2 garlic cloves, minced
Potatoes
- 1 pound baby potatoes, halved
- 1 tablespoon oil
- ¾ teaspoon paprika
- ¾ teaspoon poultry seasoning
- ½ teaspoon black pepper
Sauce and Topping
- ½ cup garlic parmesan wing sauce
- 2 cups shredded mozzarella cheese
Instructions
- Prepare Ingredients: Place the chicken tenderloins cut into bite-size pieces in a bowl and the halved baby potatoes in another bowl to prepare for seasoning and cooking.
- Season Potatoes and Chicken: Add 1 tablespoon of oil to the potatoes and 1 tablespoon of oil to the chicken. Combine the paprika, poultry seasoning, and black pepper in a small bowl. Sprinkle half of this seasoning mix over the chicken and the other half over the potatoes. Toss each to evenly coat.
- Cook Potatoes: Spread the seasoned potatoes on a baking sheet or place them in an air fryer. Roast at 400°F (204°C) for about 20 minutes until crispy and tender.
- Cook Chicken: While the potatoes roast, heat a large skillet over medium-high heat. Add the seasoned chicken and cook for 7-10 minutes or until fully cooked and nicely browned.
- Add Butter and Garlic: To the skillet with chicken, add the butter and minced garlic. Stir to combine and allow the garlic to soften and infuse the butter.
- Combine Chicken and Potatoes: Add the roasted potatoes to the skillet with the chicken, then turn off the heat. Toss gently to combine the flavors.
- Add Sauce and Cheese: Pour the garlic parmesan wing sauce over the chicken and potatoes and toss to coat everything evenly. Sprinkle the shredded mozzarella cheese on top.
- Melt Cheese: Cover the skillet with a lid and let it sit off the heat for 5 minutes to allow the cheese to melt and become nice and gooey.
- Serve: Once the cheese is melted, serve immediately for a flavorful and comforting meal.
Notes
- You can substitute the baby potatoes with fingerling potatoes or small red potatoes if preferred.
- For a spicier kick, add a pinch of red pepper flakes to the seasoning mix.
- If you don’t have garlic parmesan wing sauce, you can mix melted butter with garlic powder and grated parmesan cheese as a substitute.
- This dish pairs well with a side of steamed vegetables or a simple green salad for a complete meal.
- Use a lid that fits your skillet well to ensure the cheese melts evenly.
