  • 1 (15-oz.) can chickpeas (NOT drained)
  • 2 large cloves garlic, peeled
  • 1 stalk green onion, trimmed and roughly chopped
  • 1/4 cup loosely packed fresh basil leaves (roughly chopped before measuring)
  • 1/2 cup tightly packed fresh parsley (roughly chopped before measuring)
  • 3 Tbsp lemon juice (1 large lemon yields ~3 Tbsp juice)
  • 3 Tbsp extra virgin olive oil
  • 1/4 cup water
  • 1/3 cup tahini
  • 3/4 tsp sea salt

  • Chili oil or chili crisp

Instructions

  1. Heat the Chickpeas and Garlic: Microwave the undrained chickpeas and whole garlic cloves in a medium-sized heatproof mixing bowl for 4-5 minutes. Ensure there is about 2 inches of space at the top to avoid spilling. Alternatively, bring the chickpeas and garlic to a boil in a small saucepan and then reduce to a simmer for 4-5 minutes.
  2. Blend the Herbs and Liquids: While the chickpeas are heating, add the green onion, basil, parsley, lemon juice, olive oil, and water to a high-speed blender. Blend until the fresh herbs break down fully and the mixture becomes vibrant green and smooth.
  3. Combine Chickpeas with Herb Mixture: Drain the chickpeas and garlic and add them to the blender along with the tahini and sea salt. Process everything until the hummus is smooth and creamy, scraping down the sides as needed. Add more water or olive oil gradually if the mixture is too thick, to achieve your desired consistency.
  4. Adjust Seasoning: Taste the hummus and adjust the seasoning according to your preference, adding more lemon juice for brightness, olive oil for creaminess, or salt for balance.
  5. Serve and Store: Serve the Green Goddess Hummus garnished with chili oil or chili crisp alongside sliced veggies, crackers, or flatbread. Leftovers can be stored covered in the refrigerator for up to 4-5 days and are also excellent used as a sandwich spread.
